Okay, you guys—I’m officially a banana bread believer.
If you’d told me a year ago that I’d be raving about banana bread, I would’ve politely (but firmly) said “hard pass.” I’ve just never been into it. But then my friend made one I actually liked... and THEN my aunt Foz, casually dropped the most amazing banana bread of all time. Like, the kind that makes you say “just one more slice” twelve times. I’m 90% sure I gained a few pounds this week from “taste testing.” Totally worth the calories, I promise!
I realised maybe I just hadn’t found the right banana bread until now. - So since I’m a good samaritan and all and because all good things are meant to be shared—here’s the recipe.
Fun Fact:I actually bought my bananas yesterday—but patience? Not my strong suit. I couldn’t wait for them to ripen, so (like any resourceful 2025 human) I TikTok-ed a quick hack. And guess what? Six minutes at 180°C in the air fryer and boom—perfectly ripened bananas. No more waiting around, guys. Game. Changer. 🍌🔥
🍌 Auntie Foz’s Banana Bread
Ingredients:
2 eggs
2 ripe bananas, mashed
3 dates
120g self-raising flour
½ tsp baking powder
½ tsp cinnamon
1 tbp vanilla essence
1 1/2 tbsp Greek yogurt
120g melted butter
60g brown sugar
60g white sugar
Chocolate chips (milk and white—go wild or skip, up to you)
Walnuts or pecans (or your fave nuts, chopped small)
Use a small Square Baking Tin
Method:
Preheat your oven to 170–180°C (depends on your oven—keep an eye on it around the 30-minute mark).
Beat the eggs and both sugars together until soft and fluffy.
Mash the bananas and dates together (I pop them in a mixer with a tablespoon of water—it makes it super smooth).
Add the banana-date mix to the egg bowl along with the yogurt, vanilla, cinnamon, and melted butter. Mix until everything’s cozy and combined.
Gently fold in the flour and baking powder. No over-mixing here—we want that tender crumb!
Stir in your chocolate chips and chopped nuts. Taste the batter if you dare.
Pour the mixture into a lined baking tray or loaf tin.
Bake for about 35 minutes or until golden and a skewer comes out clean.
